This recipe was inspired by my desire to try something a little bit different with our sweet corn. The crunchy vegetables mixed with avocado and feta cheese are an excellent combination. The subtle lime salad dressing contains hints of jalapeno, garlic and cumin. Although the recipe is a bit time consuming, I think you will find it is well worth the work.
