Can you eat local produce in the dead of winter in Canada? You bet you can! My new recipe features eight different vegetables that are simmered in vegetable stock and flavoured with everyday spices. When the stew is almost done stewing, the creaminess is added along with slurry to thicken the broth. The finishing touch is the savory dumplings that will take you less than 5 minutes to make and will add a depth to the stew you will love. This tasty stew was inspired by a recipe that my youngest sister Becky Powers shared with me many years ago.
