I invite you to eat the rainbow this weekend! Our farm stand is stocked with field tomatoes, cooking onions, red onions and cabbage from local farmers. Our homegrown sweet corn is at the height of its season and is picked fresh every day. We have new white potatoes, new yellow potatoes and are excited to introduce “Papas Moradas” which means purple potatoes in Spanish. These fingerling potatoes are deep purple both outside and inside and are only available for a short time. They will be sure to be a conversation piece at your dinner table, and they taste great too! Today is National Potato Day, and to celebrate the humble potato I am releasing a new potato salad recipe. This recipe uses mini new potatoes which have a delicate skin, a fresh flavour and are only available this time of year. Fresh herbs, hard boiled eggs and my original creamy dressing are all you need to complete this salad. You will really impress when you serve this salad, and there’s no need to mention that it only takes about an hour to prepare!
Here are my top three tips for making a perfect potato salad: Generously salt the water when you’re cooking the potatoes. Let the potatoes cool to room temperature before adding any other ingredients. Make your potato salad the day before you plan on serving it so you can adjust the dressing and seasonings. Our new white potatoes are finally available at our farm stand! The drought this summer has delayed their appearance but rest assured, they are as delicious as usual. Store these unwashed potatoes in a cool dark place, and only wash them when you’re ready to cook them. The best way to enjoy their unique, subtle flavour is to simply boil the new potatoes, squash them lightly with a fork and add butter. Don’t forget to grab some of our homegrown sweet corn when you’re at the farm!
