Welcome to day 8 of “Ontario Agriculture Week” where we all can celebrate the bounty of high quality food that’s produced and sold locally in Ontario.  There are still only 7 days in a week so I seem to be going into overtime with this last recipe!  For the last seven days I’ve released a new recipe to get you inspired to eat fresh.  
 
I’ve saved the best for last…. Today’s recipe “Potato Crisps & Charcuterie Board ” will be one of my new signature dishes on the About Cooking Potatoes Page of our website.  These potato crisps are one of the tastiest little snacks I’ve made in a long time.  The recipe is extremely simple, uses only three ingredients, and turns out a crunchy snack that can stand up against any potato chip or cracker.  I’ve also included a family recipe for dip that takes the potato crisps to a whole new level.  And if you really want to go all out, you can follow my instructions for a charcuterie board starring these potato crisps that will really give your guests something to talk about.

Welcome to day 7 of “Ontario Agriculture Week” where we all can celebrate the bounty of high quality food that’s produced and sold locally in Ontario.  I’ve been releasing a new recipe every day this week to get you inspired to eat fresh.  Today’s recipe “Warm Potato Salad” will be one of my new signature dishes on the About Cooking Potatoes Page of our website.
 
I’ve always wanted to try creating a warm potato salad and I’m very happy with the results of this recipe. Sweet pickles, green onions, hard boiled eggs and bacon are added to warm mashed potatoes.  The dressing is made with bacon grease, apple cider vinegar, Dijon mustard and red onions.  This is not just for the summer; it’s for anytime you want something special!

Welcome to day 6 of “Ontario Agriculture Week” where we all can celebrate the bounty of high quality food that’s produced and sold locally in Ontario.  I’ve been releasing a new recipe every day this week to get you inspired to eat fresh.  Today’s recipe “Potato & Sweet Corn Hash” will be one of my new signature dishes on the About Cooking Potatoes Page of our website.
 
It’s always fun to experiment with the different produce that we grow to see what I can come up with.  This recipe was inspired by Mexican Street Corn.  Yellow potatoes flavoured with cumin and coriander are roasted and then mixed with sweet corn, red peppers and onions.  The entire dish is topped with feta cheese and cilantro.  Oh and there’s also my recipe for a Mexican- like crema to serve as a condiment that’s made with sour cream, lime juice and fresh chives.

Welcome to day 5 of “Ontario Agriculture Week” where we all can celebrate the bounty of high quality food that’s produced and sold locally in Ontario.  I’m releasing a new recipe every day this week to get you inspired to eat fresh.  Today’s recipe “Buffalo Chicken Twice Baked Potatoes” will be one of my new signature dishes on the About Cooking Potatoes Page of our website.
 
I love creating new twice baked potatoes recipes and this one is downright fantastic! (If I do say so myself…) Twice baked potatoes are fluffy on the inside, crispy on the outside and are generally a crowd pleasing dish. In this recipe, the creamy potatoes have a hint of blue cheese dressing. The potato filling is covered with spicy shredded buffalo chicken and topped with my simple homemade coleslaw.  This potato is a meal on its own!

​Welcome to day 4 of “Ontario Agriculture Week” where we all can celebrate the bounty of high quality food that’s produced and sold locally in Ontario.  I’m releasing a new recipe every day this week to get you inspired to eat fresh.  Today’s recipe “Sweet Heat: Mushroom Stuffed Potatoes & Potato Stuffed Mushrooms” has been one of my signature dishes on the About Cooking Potatoes page of our website for five years. Here’s one more look at this dish before it’s retired later this week:
 
This recipe is a bit of a labour of love but well worth the effort.  The appetizers can be prepared the day before and just popped into the oven when you’re ready to serve them.  I really like the fact that there is zero waste as you can see from the recipe story: “This mirrored recipe creates two delicious appetizers – Mushroom Stuffed Potato Skins and Potato Stuffed Mushrooms.  The potato skins are filed with crispy vegetables blended with a special pineapple sauce that can double as a dip.  The mushroom caps are one-bite treats stuffed with potatoes and cheese.  Both of these recipes have a zing to them that is guaranteed to delight your dinner guests.”
