Indulge yourself with these gorgeous local field tomatoes. Their superior flavour is only available during the height of the summer. We have them ready and waiting for you at our farm stand. We also have some new, unwashed potatoes and the finest sweet corn from Norfolk County. (Yes, our sweet corn will be ready very soon.) Hope to see you this weekend! You can visit “What We Offer – At The Door” for our hours of operation and directions to our farm.
Meanwhile, at the back of the farm…While Johnny has been stealing all the social media glory planting our potatoes, Curtis has been quietly planting our highly anticipated sweet corn crop for many weeks now. The planting of sweet corn is spaced out over 2 months to ensure that we always have a ripe section to pick for our customers. This video was shot as Curtis just started planting our second field. You can visit “Sweet Corn Fields” to see an aerial video of our sweet corn fields in full flower.
It’s crunch time! We estimate we will have sweet corn available for approximately 7-10 more days (depending on the weather.) Here is how I freeze sweet corn so we can enjoy it all winter. I cook the corn for 7 minutes, let it cool down and scrape the kernels off the cob with a sharp knife. Then I pop 2 cups of kernels into a freezer bag. I use about 3 cobs of corn to equal 2 cups. During the winter, all I have to do is thaw one bag and add it to my soups, stews and casseroles.
If you’re looking for inspiration for new winter dishes where you can use your sweet corn, you can visit “Cottage Pie” and “Potato & Sweet Corn Chowder.” You can also serve the corn as a side dish with recipes such as “Bangers & Mash” or “Shepherd’s Pie.” Stay tuned for my new signature dish “Potato & Sweet Corn Hash” that’s coming this fall. Bon Appétit! Have you ever thought about how perfect sweet corn gets to your dinner table? We start planting sweet corn in May and continue weekly plantings for roughly 2 months. This staggered planting ensures that we always have a section of ripe corn. When it’s time to pick the corn, every cob is handpicked by our team of migrant workers. They’re experts at selecting the best quality corn.
This aerial video clearly shows our different sections of sweet corn and gives you an insight into how much sweet corn we grow annually. (I promise I’ll get better at using my new drone for future videos!) Don’t miss out on our September sweet corn – it’s usually the best of the season. You can visit “Summer Sweet Corn Salad Recipe” for a truly tasty salad made from fresh local produce that’s available this time of year in Ontario. |
