I was thinking outside the “hashbrown sidedish box” when I created this breakfast recipe. Potatoes are turned into a pie crust for a quiche filled with creamy eggs, cheese and sausages: “This breakfast quiche is perfect for the times you want to serve an extra special breakfast. The potato crust takes only a few minutes to prepare and it is made out of one ingredient only – potatoes of course! Cooking the potato crust and the sausages the day before you plan on serving the quiche makes it simple to assemble in the morning.”
