Shepherd's Pie Recipe

For hundreds of years meat pies have been a staple fare in England, Ireland and Scotland. Although there is some uncertainty regarding the country of origin, it is generally agreed that Shepherd’s Pie was first seen in Great Britain and spread worldwide from there. Originally, a Shepherd’s Pie was made with lamb, and a Cottage Pie was made with any other meat.  The distinction between the pies is not used very often anymore.
 
Shepherd’s Pie is a hearty meal baked in one single dish. It is cooked almost entirely out of leftover food, so preparation is quick and easy. Finely ground roast beef is mixed with vegetables and gravy. It is covered with a thick layer of mashed potatoes and oven baked until it is bubbling hot.

Spring Has Sprung!

Earlier this week we celebrated the first day of spring with the arrival of our first box of sweet corn seed.  It’s hard to image that the taste of summer can come from what’s inside that plain, unassuming, little brown box.  Now we wait impatiently for the weather to warm up enough to get out into the fields to start preparing them for planting.  Only 140 more days to go until it’s ready! Combating Soil Erosion

Soil erosion can be loosely defined as the loss of topsoil through the effects of water or wind. This photo was taken on an extremely blustery March afternoon. The huge dirt cloud captured in the picture shows the phenomenon of wind erosion at work.
 
The front two fields in the photo were prepared to combat soil erosion in two different ways. The dark brown field at the bottom was worked over with a soil saver machine in the fall, which left the soil in large clumps which cannot be blown away.  The green field in the middle of the picture was planted with a cover crop which is holding the soil down.  Clearly neither of those fields are suffering from wind erosion as the heavy winds blow.

In response to your suggestions and questions, I have prepared this blog that presents the three most common ways to cook potatoes:  mashed, baked and roasted wedges.  I have also included advice about which kind of potato to use. Although I have specified a certain variety of potato to use with each recipe, switching the type of potato will not hurt your dish. 
 
Each recipe starts with a basic recipe for the beginner cook, and then has an option to dress it up with a second simple step to enhance the dish. Finally the recipe is kicked up a notch for the more experienced or adventuresome cook.  Make your own Italian herbed butter, create a creamy broccoli and cheddar cheese sauce or turn potato wedges into a nacho delight.
