Crock Pot Spiced & Herbed Spuds Recipe

As the polar vortex settles in over Southern Ontario and plunges us into a deep freeze, I’m happy to share a new recipe for some comfort food that will hopefully warm you up a little bit.  I’m honestly not sure what took me so long to publish a crock pot recipe since I am a huge fan of preparing food in a crock pot.  This is a super easy side dish to prepare and is packed with tons of flavour. Diced yellow potatoes are coated with olive oil, garlic and a variety of spices.  Toss them in the crock pot and cook for 3 hours.  Set out on a serving platter, garnish the spuds with fresh parsley and rosemary leaves and enjoy.

Do you have too many leftovers after a big family gathering? I always do, and sometimes I get tired of eating reheated plates of food.  My new festive leftover casserole is something completely different and is packed with flavour.  The first layer is leftover stuffing.  It’s covered with turkey mixed with vegetables, a thickened stock and cranberries.  The final layer is mashed potatoes enhanced with sage, onion powder and thyme.  Top with a few pats of butter and pop it into the oven.  Casseroles are very difficult to take photos of, so trust me when I say this tastes even better than it looks.

Yum…butter chicken.  Welcome to my latest installment of why use “Skip The Dishes” when you can cook and “Eat Your Dishes!”  I’m very lucky to have many friends who love to cook as much as I do.  This recipe was created with my good friend Nadene Whitefield and it will not disappoint.  Large russet potatoes are baked and the flesh is removed.  The skins are then filled with tasty butter chicken, broccoli and cauliflower.  The potato flesh is turned into a complimentary side dish called “Golden Turmeric Potatoes.”  This hearty recipe will really hit the spot as we slide into winter here in Southern Ontario.

The weather is changing, the time is changing, and our potatoes are changing.  My new soup recipe celebrates the return of our russet potatoes.  It offers proof that this versatile variety of potato can be used for much more than fries or baked potatoes.  “Potato & Broccoli Soup” is suitable for both vegetarian and vegan diets.  Russet potatoes and broccoli florets are simmered in vegetable stock with garlic, onion, and thyme leaves.  The soup can be coarsely mashed or finely pureed depending on your preference.  Garnish with minced chives, add some crunchy crackers and enjoy.

Mashed Potatoes, Mashed Potatoes!

Welcome to Day 4 of “Ontario Agriculture Week” where we celebrate Ontario farms and the bounty of food grown in Ontario.  Thanksgiving is coming and we’ve got you covered.  Our farm stand remains open 7 days a week.  You can get the freshest potatoes for your dinner and our stunning pumpkins for your decor.  Plus I have 5 original recipes to share with you today that are all about one of the Thanksgiving staples – The Mashed Potato!
 
The first recipe explains how to make the basic mashed potato, my kicked up version of garlic mashed potatoes, and my dressed up version of whipped potatoes with ricotta cheese (because no one is counting calories on Thanksgiving!)  The next four recipes will help you use up leftover mashed potatoes if you make way too much mashed potatoes like I do every year!  You can make Potato & Leek Soup, Muffin Tin Side Cakes, Herbed Mashed Potato Bowls or my famous Cheater Twice Baked Potato dish.
