My new recipe for curry sweet corn soup should help you fight through some of the absolutely icky weather we’re experiencing this November in Southern Ontario. This soup pleases the palette with a balanced flavour of sweet and savory. A simple soup base is prepared using every day pantry items. Add some vegetable or chicken broth and potatoes to thicken the soup. Pop in some sweet corn and simmer until heated. The finishing garnish can be your choice of slivered red bell peppers or finely sliced red chili peppers. The final result is colourful, flavourful and simply delicious. I guarantee you will make this more than once!

Today is National Potato Day, and to celebrate the humble potato I am releasing a new potato salad recipe. This recipe uses mini new potatoes which have a delicate skin, a fresh flavour and are only available this time of year. Fresh herbs, hard boiled eggs and my original creamy dressing are all you need to complete this salad. You will really impress when you serve this salad, and there’s no need to mention that it only takes about an hour to prepare!
Here are my top three tips for making a perfect potato salad: Generously salt the water when you’re cooking the potatoes. Let the potatoes cool to room temperature before adding any other ingredients. Make your potato salad the day before you plan on serving it so you can adjust the dressing and seasonings. New recipe alert just in time for your Easter dinner! I think Grandma Morton would have approved of my delightful adaption of her famous scalloped potato recipe. The addition of Dijon mustard and parmesan cheese to her original recipe are a fun twist. This is a very creamy dish with just a hint of mustard, and it will pair beautifully with your Easter ham. Oh, and it was taste tested and approved by all the ladies in my book club!

While we are always #AgProud here at the farm, today is a special day. Canada’s Agriculture Day was created to recognize the work of all those who help produce the food that Canadians and people around the world eat. Every year on this day I release a new recipe to get you excited about eating locally grown and produced food. This year I settled on a new breakfast twice baked potato containing ingredients you can source at your local grocery store all year round.
To make my “Potato Benedict” you need to start with one of our russet potatoes and make a traditional twice baked potato. Cover the potato generously with fresh bacon pieces. Add one poached egg and Hollandaise sauce (or a sunny-side up egg if you prefer.) Serve with a fruit bowl for a complete and wholesome breakfast.
