While we are always #AgProud here at the farm, today is a special day. Canada’s Agriculture Day was created to recognize the work of all those who help produce the food that Canadians and people around the world eat. Every year on this day I release a new recipe to get you excited about eating locally grown food. This year I settled on potato skins filled with vegetables that you can buy from local farmers in your grocery store all winter.
Roasted vegetables including carrots, sweet potato, turnips, cremini mushrooms and frozen broccoli are tossed in a Sesame Thai dressing and piled high in crispy, seasoned potato skins. The potato flesh in turned into garlic mashed potatoes topped with diced chives. My vegetarian followers can enjoy this as a complete meal, or you can add a meat of your choice.
