In this simple recipe, russet potato skins are loaded with chili, smothered with cheese and garnished with your favourite toppings such as sour cream, green onions or jalapeno peppers. I have included my recipe for homemade chili that has a nice kick that isn’t overly spicy. If making your own chili seems a bit daunting, it’s perfectly acceptable to use canned chili or use a dry chili mix package.
